How to Make Summer Rolls

But more importantly, how to make the sauce.

I always buy summer rolls whenever I go to any Vietnamese restaurant. It’s always half for the rolls and a half for the yummy peanut sauce!

I’ve tried making Summer Rolls before and it didn’t go to the greatest, mainly because I kept breaking the rice paper every time!

But, when I went to East Side Asian Market, I saw they had large rice paper wraps (These made such a difference!).

No matter how hard you try, (with the large rice paper) you can’t mess these up. 

Think of it as a tortilla that is clear, and tacky, it tastes nothing like a tortilla.

Here’s what you need:

  • Large Rice Paper Wrappers
  • Fresh Cut cold veggies (shredded carrots, radish, lettuce, etc.)
  • Vermicelli if desired (rice noodle)
  • Protein if desired (I’ve added shrimp)

Here’s what you do:

  • Wet the rice paper wrappers with cold water for 5 seconds (get it all!)
  • Place onto a large plate
  • Add filling to the middle
  • Roll it like a burrito or wrap

REPEAT!


What takes the longest is prepping the veggies into little bite sizes so it’s easier to eat. You can have these for a snack, or a meal! I’ve done both and everyone loves them. 

I like that this is an activity you can bring people in and everyone can have their own version of what they like. I’ve added pickled peppers to mine before and it was wonderful!

But.. the sauce… this dish works with a simple tamari or Sriracha, but if you’d like to have it with the traditional peanut sauce, I’ll list how to make it below! 


Here’s how to make the Summer Roll Peanut sauce:

  • ½ cup peanut butter
  • ¼ cup soy sauce
  • 2 Tablespoons rice wine vinegar - or lime juice
  • 1 Tablespoon sesame oil
  • 2 Tablespoons chili garlic sauce
  • 1 ½ Tablespoons agave
  • ¼ teaspoon grated fresh ginger
  • ⅓ cup hot water

Mix well with a mini whisk or spoon/fork and you’re done!
